  1. Okay, I will enter to win lol!

My favorite thing to cook when I know I will be pressed for time is chicken and dumplings, slow-cooked in a crock-pot. Sadly at this point in time I have been using a store-bought chicken & dumplings bag (which tastes okay but I know I can cook a LOT better than that).

I am trying to do more at-home cooking - I used to be a single mother, working full-time and raising three kids, so meals were easy things that could be slapped together quickly. But now, thanks to my Master, I am a stay-at-home mom, and I have been watching your blog and several others to learn new recipes. He works hard and deserves a home-cooked meal - and now I have the time and finances to create the meals I have always dreamed of. Now I just need recipes lol!

Currently the only home-cooked meal I know to make that also freezes well is a couple of simple soups - and those are not really meals, are they?

  3. What do you cook that freezes well?
My chicken chili ~ actually got it from Tammy's Recipes.

What is your favorite meal to make when you are short on time to prep and cook? ~ Taco's of some sort. We always have hamburgers and tortillas, and I always make my own taco seasoning so it's a quick easy meal.

Have you ever done a Once-a-Month Cooking type plan and if so what is your favorite dish when doing such a plan? ~ I haven't done OAMC yet but I do want to, esp with us moving in with another family in March!

  4. What do you cook that freezes well?

    * I think Chili and Spaghetti Sauce freeze the best. I can usually make a quadruple batch of either and freeze and it keeps nicely and stacks fairly easily!

What is your favorite meal to make when you are short on time to prep and cook?

    * Roast Beef in the crock pot! I can let it sit all day and cook and not have to worry. Also, if that isn't an option, Spaghetti always is because I always have froze sauce.

I'm working on it now! I've been gradually working up to being able to cook dishes for a month at a time. I did a week, then two weeks and last time 3 weeks. So far the thing that has been my favorite to make has been Turkey Loaf. It freezes really well too!

  5. What do you cook that freezes well? We don't do many whole meals that freeze well, but we freeze tomatoes to make sauce from and soup stock by the gallon. But I want to learn to do more of this!

What is your favorite meal to make when you are short on time to prep and cook? Burritos - black beans (rehydrated in mass and then pulled from the freezer!), fresh veggies, cheddar and tortillas - home made if there's time.

Have you ever done a Once-a-Month Cooking type plan and if so what is your favorite dish when doing such a plan? No, but I love the idea!

  6. I like to cook chili because the recipe I have makes a LOT of it. It's nice to have some frozen, leave it in the fridge for the day and just quickly reheat it.

As for something quick to make, I generally just make some type of pasta with canned sauce.

I haven't done anything with once-a-month cooking but it's something I AM interested in trying out! Seems like it'd be such a great idea. My e-mail is deltafishx@gmail.com

  7. Lasagna freezes well. It is great too because all I have to do is thaw it in the morning and when i come home it is only a few minutes till it is cooked. I make it like a real lasagna just that I dont put a lot of cheese on the top and then I bake it for a while. I then take it out, not fully cooked and put some cheese on it after it cools off and put it in the freezer. It is a great one. And the only one I make that I I can freeze. This book would be helpful.

  9. One of my favorites is what my house calls "Country Soup". Its simple, we put a pot on to boil with cream of chicken soup, Mrs. Dash, whatever veggies are in my freezer, and leftover chicken (breaded or not) if we have it. We usually pair it with canned biscuits or whatever bread we have.

For monthly planning, we make frozen breakfast semi-monthly. Breakfast Burritos, Baked French Toast, Pancakes, whatever else we have on hand. This way, breakfast rarely packs a punch in the grocery budget.
